Fish Sauce Chicken Wings

Ingredients:

- 8 to 10 finely chopped garlic cloves

- 1/2 cup fish sauce or Nuoc Mam

- 1/2 cup of sugar

- 1/3 cup of warm water

- 10 whole chicken wings cut at the joints

- 3/4 cup rice flour

- 1/4 cornstarch 

- 2 teaspoons of baking powder

- 2 tablespoons of Asian garlic and chili sauce or

   Indonesian Sambal Olek or anything similar


Directions: 

  1. Mix together the chopped garlic, sugar, fish sauce, and warm water until syrupy. This is the marinade for the wing drumettes and flats.

  2. Discard the tips or save for making stock. 

  3. Marinate for at least five hours or overnight. Drain the wings and save the marinade. 

  4. Coat wings in the rice flour, cornstarch, and baking powder mixture.

  5. Place on a slightly greased baking pan or parchment paper. Bake for about 45 minutes until completely cooked. 

  6. Meanwhile in a large skillet, bring the leftover marinade to a boil and add chili sauce. This will slightly reduce. 

  7. Toss the cooked wings in this mixture and serve with some lime wedges on the side.
